The first time I ever tried surf and turf was in a strip club basement. It was amazing. This is the story. Recipe below.
½ cup of shredded cheddar cheese
½ cup of sour cream
1 bag of tortilla chips
1 finely diced tomato
¼ cup of chopped cilantro
½ a finely chopped white onion
1 small finely chopped jalapeno
1 tablespoon of lime juice
Salt and pepper
1 finely chopped clove of garlic
½ pound of ground beef
¼ cup of taco seasoning
PEPPER JACK QUESO
2 tablespoons of butter
2 tablespoons of ap flour
1 cup of milk
1 ½ cups of shredded pepper jack cheese
Combine the vegetables with salt, pepper and lime juice. Set aside.
Add the ground meat to a frying pan. Proceed to break up the meat while at the same time browning it. When the meat is browned, add the garlic and the taco seasoning. Set aside.
Add the butter to a small saucepan or pot. When it is fully melted, add the flour and stir. When the flour and butter mixture turns golden brown, add the milk and sitr. When the milk starts to thicken, add the shredded pepper jack cheese. Turn off the heat. Continue to stir until the cheese is fully incorporated into the mixture. Season with salt and pepper.
Start by adding a layer of tortilla chips to a plate. Add some of the seasoned beef followed by the queso cheese.
Sprinkle with the pico de gallo and shredded cheddar cheese. Add a dollop of sour cream.
