Taco Bell Chicken Mexican Pizza
1 large flour tortilla
1 large chicken breast
2 cups of all purpose flour
2 beaten eggs
1 gallon of cooking oil
1 cup of liquid nacho cheese
1 cup of Mexican style shredded cheese
1 tomato diced
1 onion diced
½ cup of chopped cilantro
2 tablespoons of vinegar
Juice of half a lemon
½ cup of red enchilada sauce
Slice the chicken in half making sure that it’s not completely cut. Lay out plastic wrap and put the chicken on top. Put another piece of plastic on top of the chicken. Using a mallet, hit the chicken and making it thin. Put the chicken in the freezer until it has solidified.
Preheat the cooking oil to 375 degrees F. Crack a few eggs into a shallow bowl and scramble. Add some taco seasoning to another bowl of flour. Coat the chicken in the egg mixture followed by the flour. Repeat.
Add the chicken to the hot oil and fry for about 5 minutes.
Place a flour tortilla on a baking sheet. Cover it with liquid nacho cheese. Add the chicken on top the cheese. Cover the chicken in the red enchilada sauce followed by the shredded taco style cheese.
Combine chopped tomato with the chopped onion, chopped cilantro and juice of a lemon in a bowl. Add the pico de gallo to the shredded cheese. Bake in the oven for about 10 minutes or until the cheese melts.
