SPOILERS!! I got kicked out of the dessert round in Chopped. I told the judges I would redeem myself and remake the dessert, and now I have.
Mochi Ice Cream
Dice the dragon fruit. Add it to a pot with diced quince paste, lemon juice and water. Cook it on medium heat until the quince paste breaks down and forms a sauce. About 5 minutes.
Combine the instant oatmeal, brown sugar, flour and cold butter cubes in a bowl. Cut the butter into the dry ingredients until it forms somewhat of a dough.
Pack a ramekin with some of the oatmeal mixture and form a cup. Bake in the oven for about 15 minutes. Take it out and put it in the fridge to cool.
Cut up a mango and dice up the flesh until it is somewhat pureed. Set it aside.
Extract the ice cream from the rice exterior of the mochi. Combine with some cream and whip until it forms a thick whipped cream consistency.
Fold the pureed mango into the whipped cream. Add it to a piping bag.
When the oatmeal has cooled, take it out of the fridge or freezer. Add a small amount of the quince dragon fruit compote to a plate. Place the oatmeal cup on top of the compote. Fill the cup with some more compote, and pipe some of the cream on top.
