How to make a Corned Beef Sandwich

2 pound of brined brisket
1 tablespoon of mustard seed, peppercorns, dried basil, coriander seeds and red pepper flakes.
2 tablespoons of course salt

4 small cucumbers
1 cup of vinegar
1/4 cup of sugar
1 tablespoon of mustard seeds
1 tablespoon of chopped dill
4 bay leaves
4 cloves of crushed garlic cloves

2 russet potatoes

Step 1
Cover the brisket with the seasoning mixture. Put it into a pot and cover with water. Bring to a boil and then turn it down to a simmer. Simmer for 1 hour a pound.
Step 2
Take the brisket out and let cool to room temperature. Slice the brisket against the grain before making the sandwich.

Step 1
Combine the vinegar, mustard seeds, bay leaves, dill and crushed garlic in a pot on medium heat. Take it off the heat when the sugar dissolves.
Step 2
Put the sliced cucumbers in a jar. Cover with the liquid and let come to room temperature. Once it reaches room temperature, put it in the fridge.

Slices the potatoes into matchsticks. Submerge in water until the water before cloudy.
Step 2
Dry the potatoes. Bring a pot of cooking oil to 325 degrees F. Add the potatoes and fry for about 3 minutes or until the potatoes become slightly golden.
Step 3
Take out the potatoes and turn up the heat to 350 degrees F. Add the potatoes back into the oil and fry until golden brown.
